Ravioli di ricotta
Ingredients:
- 1kg of fresh ricotta - four eggs - two spoons of flour - Cut parsley - Lemon juice
Preparation:
To prepare the ravioli pasta: take
the desired quantity of hard grain semola and
knead it with some slightly salted lukewarm
water; if you wish, you can add some egg, continuing
until it becomes smooth and soft.
Prepare the pasta taking small quantities
of the mixture and flatten them with the rolling
pin, until they are thin and ready to be filled.
Once the filling has been prepared, cover half
of the mixture and cut with the pastry cutter.
To prepare the filling: Beat
the eggs and salt slightly, then add them to
the ricotta, the flour, the parsley and the
lemon juice.
Use a wooden spoon to mix all together until
the texture is even. With the pasta mixture,
prepare the ravioli. Cook in a large quantity
of salted water, add a tomato based sauce and
grated pecorino cheese. |
