Piricchittus

Ingredienti:
- 300g flour
- 6 eggs
- A cup of oil
- 400g of sugar for the coating

Preparation:
In a bowl, beat five eggs and add slowly the flour and the oil. Work the mixture well until it is smooth and soft, at which point the sixth egg is added.

Covering your hands in flour, take two pieces of the mixture and make either two long strips which are then cut into pieces, or roll into balls. These are then placed, with a reasonable distance between them, into a baking pan which has already been covered in flour.

Put the baking pan into the oven at a moderate heat so that the mixture will cook through to the middle. In the meantime, prepare the covering. Pour a cup of water into a terracotta vessel and then add the sugar and the grated lemon rind.

The vessel should be left over the flame until a thick syrup has formed. In this, place the piricchittus and turn them quickly so that they absorb the sweetness of the sugar. Finally, pour all the contents of the vessel onto a flat marble surface and, by hand, remove the sweets from one another. Place in a plate to cool.

It is a sweet that can be preserved for a long time.
