Papassini
Ingredients:
- 1 kg flour, 6 eggs, 500g sugar.
- 200g lard, 30g bicarbonate.
- 250ml milk
- 300g almonds
- 300g raisins
- Lemon rind and orange rind
Preparation:
Beat the eggs well with sugar, and put the lard into warm milk which, after being left to cool, the bicarbonate should be dissolved, and then added to the eggs. Add the flour, kneading the mixture until it becomes smooth and compact. Add the mashed almonds, the raisins (washed and dried), the grated lemon rind and orange rind. Take small portions of the mixture and on a rolling board dusted with flour, roll the mixture to about 6 or 7cm of length, cutting it in the shape of a rhombus, dampen the upper part, then put the mixture in sugar before placing it in the baking pan with a cooking paper, and letting it cook in a preheated oven. If the papassinos are not put in sugar, after they have been cooked they can be covered in a glaze of sugar.
