Typical peasant dish
In Sardinia, you used to cook “Su Proceddu” on
a slow heat with scented wood before covering
it in branches of fresh myrtle. The homely
equivalent, in lieu of a grill, allows the
use of an oven (electric oven is better) at
175˚. Use one half or one quarter of the
pig, placing it on the grill in the middle
of the oven. Cook for at least 80 minutes.
Calculate the length of time with reference
to the size and thickness of the meat.
It is important not to add salt until it is
cooked. It is served well with a “Monica” red
wine or “Cannonau”. |
