Sardinian gnocchetti
Ingredients:
- 500g of hard grain semola - Salt - Grated Sardinian pecorino cheese
Preparation:
Prepare the mixture and work it until it has
become compact and hard, then cut into pieces
that are to be rolled in the flour and form
into fine string shape.
Cut the string shaped mixture into long pieces
of about 2cm and roll them on a flat surface,
giving them a longer form (their typical form).
Place them on a table cloth to let them dry.
Cook them in a fair amount of boiling salted
water.
Drain them and flavour them with a tomato
based sauce, sausage and sprinkle grated Sardinian
pecorino cheese on them. |
