Carnevale Pancakes

Ingredients:
1kg of semola or hard grain flour, 4 whole eggs, 10g of yeast, 200ml of lukewarm milk, salt.

Preparation:
Create the dough from the semola or the flour and the yeast with slightly salted warm water. Knead well; add the eggs, one at a time, and the lukewarm milk.

Mix the dough, if necessary, with water to make it very soft. Let it sit in a warm place for at least three hours. Break off small portions of the dough with your hands (wet from water or milk) and lay them out for a bit, before frying them in a generous amount of oil or lard.

The pancakes are best eaten warm.
