Sardinian wild boar
Typical peasant dish
Ingredients: For four people, 800g of wild boar (diced shoulder or ribs), 200g of whole Sardinian olives, two dried tomatoes, some capers, one large onion, 100g of extra-virgin olive oil, salt, chilli, and “Cannonau” wine.
Preparation:
In a casserole dish, brown the diced meat with
oil for about five minutes, then add the onion
in large slice, the olives, the tomatoes and
the capers.
Add salt and chilli according to taste. Brown
all for a few minutes and then cover it with “Cannonau” wine.
Cook over a slow heat for about one hour, stirring
every now and then. One variation is to use
pig meat, given the difficulty in finding wild
boar. It is served well with a “Monica” red
wine or “Cannonau”. |
